Hey, got my PCM4less done, and installed, and I remember that I had it tuned with no cats. I thought I would need to do this because of the manifold cat gut, now I am starting to think I may have made a mistake by doing this?? What/if anything did I do?

Maybe? It depends on if PCM4less actually acted on that information. Our PCMs have CAT Over Temp protection built in where it will add fuel when the CAT is seeing extremely high exhaust temps to help cool the exhaust to prevent from melting the CATs. There are enable/disable, temp and fueling thresholds that could be adjusted. I typically disable this for tuning but re-enable in when I am done. If I was told no cats and did not physically look under the vehicle then I would disable COT. Running to hot thru the will decrease the CAT's effectiveness and may cause you not to pass emissions. If the temps are high enough for long enough if could also damage the cat. I would suggest calling PCM4less to see if they can look it up and see what they advise.

Wouldn't running the engine richer lead to more fuel getting into the exhaust causing the cat to heat up more?

Yes, extremely rich will melt the cats but when the cats are seeing elevated temps (1700+) then fuel is added to cool the exhaust and increase the efficiency of the cat (not necessarily increasing MPG).
